Ayurvedic Tips & Essential Self Care Rituals

I found this recipe in the Happy Belly Cookbook – from Nadya Andreeva – definitely a blog to check out for great ideas on keeping your belly happy.
This recipe is super easy, super healthy and super quick to make – what more can you ask for? Although the first time I made them I did skip the activated nut step as I didn’t read that part and did not have time to do that before making it – so if you want to be even healthier – plan ahead and soak your nuts first. Ingredients:
• 1 cup pitted Medjool dates
• 1 cup activated (or regular) nuts (almonds or walnuts)
• 1/3 cup cacao powder (raw, organic if you have it)
• 1/3 cup coconut oil
• 1/2 cup shredded coconut – plus more for rolling afterwards.
• 1 tbsp chia seeds
Directions:
1. Soak dates in warm water to soften for 15 minutes.
2. While the dates are soaking chop nuts in food processor or blender.
3. When nuts are evenly chopped add in cacao powder, coconut oil, shredded coconut and chia seeds. Blend well.
4. Add in soaked dates and process until well combined.
5. Let the mixture sit in the fridge for 10 minutes to set a little.
6. Roll mixture into bite-sized balls, rolling in coconut flakes to seal so they don’t stick to fingers or each other.
7. Enjoy!
